Weeknight Turkey Chili

Ingredients:

  • 1 lb of ground turkey

  • 1 half white onion

  • 1 half red onion

  • 4 tsp of paprika

  • 2 tsp of cumin

  • 1 tsp of kosher salt

  • 1/2 tsp of pepper

  • 1/2 tsp of cayenne pepper

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 can of pinto beans; semi drained

  • 1 can of kidney beans; semi drained

  • 1 can (14.5 oz) of crushed tomatoes

IN a Dutch oven or a heavy-bottomed pot, add about 1 tbsp of olive oil and heat it over medium heat. Add in your ground turkey and your two kinds of onions and cook until the turkey is no longer pink. Break the turkey up with a wooden spoon while it cooks.. Once the turkey meat is cooked through, add in your spices and mix well making sure the onions and turkey are coated evenly.

Now it is time to add the liquids and beans! Add your two types of beans and your crushed tomatoes to the turkey and onions and combine well. Add in 6 tsp of water- I usually fill the tomato can with water, swirl it around, and then pour my teaspoons from there- and mix. Bring the heat down to a simmer cover and let simmer for 1- 2 hours.

Taste it and adjust seasonings as needed! Serve with corn bread.

Some of my favorite chili toppings include shredded cheese, fresh or pickled jalapenos and raw red onions! You can also do pickled onions and sour cream!
