Cold Peanut Noodles

Ingredients:

  • 2 packages of ramen (just the noodles, so feel free to use another kind of noodle if you want!)

  • 2 (generous) tbsps of peanut butter (smooth or chunky works)

  • 1 tbsp of tahini

  • 3 1/2 tbsp of soy sauce

  • 2 tbsp rice vinegar

  • 1 tbsp of sugar

  • 2 tsp of finely minced garlic

  • 2 tsp of chili- garlic sauce (I use Huey Fond Chili Garlic Sauce, but you can also use Sriracha, or any other spicy sauce you like)

  • 3 tbsp of chopped roasted peanuts

  • 1 Persian cucumber, peeled and julienned

  • 1 sprinkle of sesame seeds

Cook your noodles as instructed by the package. Make sure they are chewy but not over cooked. Drain them and rinse them in cold water to stop the cooking. Set aside.

In a large mixing bowl, whisk together the peanut butter, tahini, soy sauce, vinegar, sugar, garlic and chili-garlic sauce. Mix it until fully emulsified. Toss in the cold noodles and mix well so all the noodles are coated.

Top the noodles with peanuts, sesame seeds and the cucumber slices.
