Salad Cuit

Ingredients:

  • Two 28 oz. cans of diced tomatoes; drained

  • 3 tbsp of olive oil

  • 1 jalapeno; de-seeded and finely diced

  • 2 cloves of garlic; minced

  • 1/2 tsp of salt

  • 1/4 tsp of ground pepper

  • 1 tsp of paprika

In a pot with a lid, add in your drained tomatoes and olive oil. Mix well and bring to a medium heat.

Add in your peppers, garlic, salt, pepper, and paprika and mix well.

Drop the heat to a simmer and cover for about 1.5 hours.

Adjust the seasonings to your taste.

Once the tomato mixture has cooked down, turn off the heat and let it come to room temperature. Put the salad cuit in a container or jar and place it in the refrigerator or you can serve it room temperature.

Serve with bread, pita chips or literally anything. Salad cuit is the perfect condiment to have in your refrigerator for eggs, sandwiches, toast, etc.
