Easy Homemade Hummus with Spiced Beef

This recipe is inspired by the delicious minced meat hummus at L’As du Falafel in Paris, France.

Hummus Ingredients:

  • 2 15.5 oz. cans of chickpeas; drained

  • 1 lemon; juiced

  • 1 clove of garlic; minced

  • 1 cup of tahini

  • 2 1/2 tsp of kosher salt

  • 1 cup of ice water

  • 1 ice cube

Spiced beef ingredients:

  • 1 tbsp of olive oil

  • 1 lb of ground beef

  • 1 yellow onion; finely chopped

  • 2 heading tbsp of tomato paste

  • 4 cloves of garlic; minced

  • 1 tsp of paprika

  • 1/2 tsp of smoked paprika

  • 1/2 tsp of cumin

  • 1/2 tsp of sumac

  • 1/2 tsp of kosher salt

  • 1/4 tsp of turmeric

  • 2 tbsp of water or broth

  • 2 tbsp of parsley; chopped

  • 3 tbsp of pine nuts; toasted

First let’s make the hummus! In a food processor or blender, add in your drained chickpeas, lemon juice, garlic, tahini and salt. Blitz it all together on high and then add in your ice water. Blend until everything is smooth and at the last second, add in your ice cube. The ice cube will make the hummus nice and creamy.

I prefer my hummus to be on the lemony side so adjust your lemon, garlic and salt to your own taste. Making your own hummus at home is great because you can make it however you like, including the consistency.

Set the hummus aside as we get started on the spiced beef.

In a cast iron skillet or large pan, heat 1 tbsp of olive oil. Once the oil is hot, add in your ground beef and onions. Cook until the onions are glossy and the beef is fully cooked through.

Add your tomato paste and garlic and mix everything together well. You want the beef mixture to be fully coated with tomato paste with no large chunks of tomato paste.

Season the beef with all of your spices (paprika, smoked paprika, cumin, sumac, salt and turmeric) and mix well. Let the beef/onion juices evaporate and caramelize. Add in your water or broth at the last minute to keep the meat mixture from drying out.

Toss the meat with parsley.

Plate the hummus by laying it flat on a plate in an even layer. Add your spiced beef mix on top of the hummus and top with your toasted pine nuts and a final drizzle of good quality olive oil.

Serve with some fresh pita bread, homemade pita chips or laffa bread.
