Tomato Sandwich

I feel like the tomato mayo sandwich is really having a moment right now, so I wanted to hop in and give my take. This recipe is for one sandwich, so feel free to adjust as needed.

Ingredients:

  • Two pieces of Tuscan or Sourdough bread; toasted to your liking

  • Kewpie mayo

  • 1 large tomato; cut into thicker slices

  • Flakey sea salt

  • Handful of arugula

  • Good quality olive oil

  • A sweet vinegar of your choice (this is the one I like but balsamic also works)

Toast your bread to your preference and set aside.

Slice your tomatoes in relatively thick pieces and season with flakey salt.

In a small bowl, dress your arugula with your oil, vinegar and a pinch more of the flakey salt. Toss and set aside.

To assemble, lather your toast with mayo (the more the merrier, in my opinion). Layer down your tomatoes and then top with your dressed arugula. Add the top piece of toast (that is also mayo-ed) and slice.

If you really want to go crazy, add in some prosciutto, burrata or even some tinned fish of your choice.
