Pork Kra Pow
Ingredients:
1 lb ground pork
2 cups of cut up green beans (I used about 12 oz. of green beans and cut them into 1 inch pieces
2 cloves of garlic; minced
1 serrano chili; sliced (feel free to sub for jalapeno or Thai chilis, depending on how hot you want it!)
1 cup of Thai basil leaves
4 tsp of soy sauce
1 tbsp brown sugar
3 tbsp oyster sauce
1 tsp of vegetable oil
White rice for serving
Fried egg for serving
In a hot pan, heat up your vegetable oil and once warm, add in your ground pork. Break apart your meat with a spatula so that you have small pieces.
Once your meat is about 75% cooked, add in your minced garlic and chopped chilis. Mix well and cook until the meat is browned.
Add in your chopped green beans and mix well.
Add your seasoning- sugar, soy sauce and oyster sauce and mix so that everything is covered.
Cook until the meat darkens a bit and starts to caramelize, about 10 7 minutes.
Toss in your basil and mix one last time.
Serve over rice and with a fried egg (option, but encouraged).
