Cheesy Gochujang Pasta

Ingredients:

  • 1 lb of dried pasta (shape of your choice)

  • 2 cloves of garlic; minced

  • 1/2 of an onion (any kind works, but I used yellow); diced

  • 3 tbsp of unsalted butter

  • 3 tbsp of gochujang

  • 1 1/3 cup of heavy cream

  • 1/2 cup of shredded mozzarella cheese (or any sort of shredded cheese on hand)

  • Salt & Pepper to taste

  • Chives and green onion for topping

Cook your pasta according to the package al dente, reserving about 1/2 cup of pasta water.

In a pan big enough to make the sauce and add in your cooked pasta, melt your butter. Once melted, add in your onion and garlic and cook until just translucent. Add in your gochujang and with a plastic spatula mix everything together so that everything is well coated in gochujang.

Add in your heavy cream, mix well and salt and pepper to taste. Add your cooked pasta right into the sauce mixture and coat the pasta evenly.

Add in your cheese and mix well so there are no clumps of cheese. If things are looking too gloopy, add in your pasta water to thin out the sauce.

Serve it up warm and top with chives and scallions!
