Kani Salad

If you grew up on imitation crab California rolls, this recipe will be incredible nostalgic for you!

When I was growing up, we would go to a Japanese spot in San Rafael called Yu Shang where they would serve up something called a “crab special”. The crab special was essentially a kani salad served as a gunkan maki and it was the most delicious thing ever!

Ingredients:

  • 1 package (12 oz) of imitation crab sticks; patted dry and pulled apart into strings

  • 2 tbsp + 1 tsp of Kewpie mayo

  • 2 tbsp of Furikake (Japanese rice seasoning)

  • 1/8 tsp of kosher salt

In a bowl, mix together your pulled apart imitation crab sticks and Kewpie mayo until everything is nicely coated.

Add in your Furikake and salt and mix well.

Use on a poke bowl or in hand rolls or even over a bowl of hot rice with avocado and cucumber and enjoy.
