Curry Chicken Salad

This is inspired by a coronation chicken sandwich that you can get in the UK. I love the curry flavor but could do without the dried apricot and with the more traditional accompaniments.

This recipe is perfect to use up some leftover chicken or to meal prep for your lunches with a rotisserie chicken.

Ingredients:

  • 2 cups of cooked chicken; chopped up finely

  • 1/2 cup of celery; finely chopped

  • 1/4 cup of red onion; finely chopped

  • 3 tbsp of Kewpie mayo

  • 1 tsp of yellow mustard

  • 2 tsp of curry powder

  • 1/2 tsp of kosher salt (adjust to taste)

  • 1/2 tsp of paprika

In a large bowl, mix together all the above ingredients. Give it a taste and adjust any seasonings as needed (feel free to do less mayo if you like it less mayo-y).

Serve on bread or with crackers or with lettuce cups.
