Turkey Meatloaf
This recipe is inspired by our dear friend Carol’s meatloaf recipe.
Meatloaf ingredients:
1 lb of ground turkey (feel free to sub with ground beef)
1 large egg
1/ 2 cup of panko breadcrumbs
1/2 cup of milk
1/4 cup of ketchup
3/4 of a package of Onion Soup Mix
1 tsp of Worcestershire sauce
Salt + pepper
Glaze ingredients:
2 tbsp of brown sugar
1/4 cup of ketchup
1 tbsp of yellow mustard
Preheat your oven to 350F and prep a baking pan with some parchment paper. Set that aside for later.
In a small bowl, mix together the panko breadcrumbs and the milk. Let that sit so that the panko semi-absorbs the milk.
In a large bowl, mix together all of the meatloaf ingredients (including the soaking panko), until you have a smooth texture with everything mixed in. If the meatloaf mixture is looking too “wet” I would recommend adding a bit more panko breadcrumbs.
Then, in a smaller bowl, whisk together all the ingredients for the glaze and set that aside. (Taste it and make sure you like it!)
Form the meat mixture into a log shape and place it on the prepped baking sheet. (We are using a baking sheet so that the drippings / oil can drain off easily).
Bake for about 25 minutes. Pull it out, and using a pastry brush, brush it with the glaze and put it back in the oven for another 10 minutes. Pull it out again, brush it with glaze again and bake for a remaining 10 minutes.
Serve with some potatoes and veggies.
