Sweet Apple Kugel (For Rosh Hashana)

Ingredients:

  • 2 apples (of your choice); peeled, and cut into very fine cubes

  • 1 package of wide egg noodles; cooked per the package

  • 1 stick of unsalted butter; melted

  • 7 eggs

  • 2 tsp of vanilla

  • 1 1/2 tsp of cinnamon

  • 8 oz. sour cream

  • 10 oz. of full-fat cottage cheese

Optional: Raisins! I am not a huge raisin gal, but feel free to add them!

Preheat your oven to 350F.

Pull out a large casserole dish and set aside for later. Cook your egg noodles per the package instructions, drain and set aside.

In a large mixing bowl, whisk together your eggs and then add in your vanilla and cinnamon. Whisk in your sour cream and cottage cheese and mix well. You should have a nice smooth (minus some cottage cheese curds) liquid.

Add in your cooked egg noodles and cubed apples. Mix well.

Pour the melted butter into your casserole dish and using a pastry brush, move it around so it covers the bottom and sides on the pan.

Bake for about 40-50 minutes until golden brown and not jiggly.
