Za’atar Chicken, Chard, & Rice
Ingredients:
4 tbsp of olive oil
1 lb of ground chicken
1/2 red onion; sliced
1 tsp of smoked paprika
1 tsp of kosher salt
1 tsp of pepper
1/4 cup of olives (green or kalamata); cut in half
1 tbsp of za’atar
2 cups of cooked jasmine rice
1 bunch of swiss chard; coarsely chopped
3 tbsp of dill; chopped
1 tbsp of parsley; chopped
Juice of 1 lemon
Optional toppings: crumbled feta or pan seared haloumi cheese.
Cook your two cups of jasmine rice and set aside for later!
In a bowl, mix together your paprika, 1 tsp of kosher salt and 1 tsp of pepper with the chicken. Mix in your onions and set aside.
Heat up a skillet with 3 tbsp of oil and once it is hot, lay out your chicken mixture, patting it down flat against the pan. Cook the chicken mixture until nice and crispy and browned. Remove the chicken from the pan, put it on a plate and set aside.
Add your olives right into the hot pan with the leftover chicken juices. Add in your cooked rice and za’atar and mix well. Add in your swiss chard and mix again. The chard will start to cook against the cooked warm rice. Add in the additional 1 tbsp of oil to help break up the rice.
Once everything is well mixed, add back in the chicken mixture and mix, again! Add in your chopped herbs and lemon juice and toss it all together.
Serve warm with some crumbled feta or some cooked haloumi cheese.
