Vodka Sauce Beans + Sausage with Burrata Skillet

Ingredients:

  • 1 tbsp of olive oil

  • 1 lb of fresh sweet Italian chicken sausage (pork also works); de-cased

  • 1 25 oz jar of vodka sauce (I like the Trader Joe’s vodka sauce)

  • 1 can (15.5 oz) of cannellini beans (or any white bean, like navy beans); drained

  • 1 bunch of Tuscan lacinato kale; chopped

  • 2 larger balls of burrata

In a cast iron skillet, heat up your olive oil and when the oil is warm, break up your sausage and cook until it starts to get brown and crispy.

Add in your jar of vodka sauce and beans and mix well. Bring the sauce to a light simmer - you want to heat the beans through.

Add in your kale and let it wilt slightly.

Top with the burrata balls (I break them apart a bit) and serve with some crusty bread.
