My Favorite Way to Egg Salad

Ingredients:

  • 8 eggs

  • 3 (heaping) tbsp of mayo

  • 1 tsp of yellow mustard

  • 1/4 cup of celery; finely chopped

  • 2 tbsp of chives; chopped

  • 1/2 tsp of Tony Chachere’s seasoning

  • 1/4 tsp of ground black pepper

Note: If you don’t have chives, leave them out! If you have dill, add it!

Boil your eggs to your liking and submerge in an ice bath until they are full cooled. (I like a 12 minute egg for egg salad).

Chop up your eggs and add them to a bowl. Mix in all the other ingredients.

Adjust the seasoning to your taste and serve with crackers or on toast.

To take your egg salad to the next level, layer avocado on toast and then scoop on your egg salad OR add cottage cheese to toast and then scoop on your egg salad. Whatever floats your boat!
