Miso Shrimp & Kale Salad

Shrimp Ingredients:

  • 1 lb of shrimp; deveined, peeled and de-tailed

  • 2 tsp of Cajun or Caribbean seasoning

  • 2 tbsp of butter

Salad Ingredients:

  • 3 cups of Tuscan kale; shredded

  • 3 cups of green cabbage; shredded

  • 3 tbsp of cilantro leaves

  • 1/4 cup of radish; julienned

  • 1/4 cup of peanuts and or cashews; chopped

  • Optional topping: toasted sesame seeds

Dressing Ingredients:

  • 3 tbsp olive oil

  • the juice of 2 limes

  • 3 tbsp of white miso

  • 3 tbsp of sugar

  • 2 cloves of garlic; minced

  • 1/2 tsp of salt

Start with preparing your shrimp by melting your 2 tbsp of butter on a cast iron pan. Once the butter melts and gets foamy, add in your seasoning to make a seasoned butter. Add in your shrimp and cook for about 2-3 minutes on each side. Once they are fully cooked, removed the shrimp from the pan and set aside. Once you are ready to put the shrimp in the salad, cut the pieces into thirds before adding it to the mix.

Next, make your dressing by adding all your ingredients into a container and using an immersion blender blend everything together until smooth and creamy. You can also do this in a blender or food processor. Put the dressing in a container and put it in the refrigerator until you need it.

For the salad, in a large bowl, mix together all of your salad ingredients including the kale, cabbage, cilantro, radish, and nuts. Add in your chopped shrimp and dress to your liking and toss really well.

Serve into bowls and top with sprinkled sesame seeds.
