Orange Loaf Cake

Loaf ingredients:

  • 3/4 cups of sugar

  • Zest of 1 large orange

  • 2 eggs

  • 1 tsp of vanilla extract

  • 4 tbsp of melted unsalted butter; cooled down

  • 1/4 cup of vegetable oil

  • 3 tbsp + 1 tsp of yogurt (use what you have - I had a honey vanilla Greek yogurt and this worked great)

  • 2 tbsp of fresh squeezed orange juice (from the zested orange)

  • 1 cup + 2 tbsp of AP flour

  • 1/2 tbsp baking powder

  • 1/2 tsp of kosher salt

Preheat your oven to 350F and line a loaf pan with parchment paper. Set that aside for later.

In a large bowl, mix together the sugar and orange zest with your fingers. You are essentially making orange infused sugar. Using a whisk, add in your two eggs and mix it all together. Add in your vanilla and whisk it all together.

Whisk the melted butter, oil, yogurt, and orange juice in until everything is smooth. Add in all the dry ingredients (flour, baking powder, and salt) and whisk it all together until there are no dry lumps left.

Pour the batter into your prepped loaf pan and bake for about 45 minutes to an hour, or until a tooth pick comes out clean.

Let the cake cool completely and then serve at room temperature.
