Coconut Cookies
Ingredients:
1 1/4 cup of flaked, unsweetened coconut
1 1/4 cup of AP flour
1/2 tsp baking soda
a pinch of salt
1/2 cup (1 stick) butter; melted
1 egg
1 tsp of vanilla
1/2 cup of brown sugar
1/2 cup of white sugar
Preheat your oven to 350F and line two baking sheets with parchment paper.
In a small bowl, mix together the flour, baking soda and salt with a fork and set aside.
In your large, mixing bowl, mix together the white and brown sugar with the melted butter. I like using a wooden spoon to create a paste-like texture. Add in the vanilla and egg and mix well.
Pour in the flour mix and combine until you have a thick cookie dough.
Add in the coconut flakes and mix again. The flakes will make the dough seem a bit more dry, so use your hands to mix it all in so the flakes are fully incorporated into the dough and not falling off.
Create small balls out of the dough and place them on the baking sheet. Bake for about 9 minutes- they may look slightly under done, but they continue cooking when you pull them out and become a bit crisp. Move the cookies to a cooling rack and let cool completely before enjoying.
