Cornbread

Ingredients:

  • 1 cup of AP flour

  • 3/4 cup of medium-grind yellow cornmeal

  • 2 tsp of baking powder

  • 1/4 cup of brown sugar

  • 1/4 cup of white sugar

  • 1 can of sweet corn; drained

  • 1/2 cup of butter milk

  • 2 large eggs

  • 1/4 cup of canola oil

  • 1/2 cup (1 stick) of butter; melted

  • 1 tsp of kosher salt

Preheat your oven to 350F and grease a round 9 inch cake pan.

Whisk the flour, cornmeal, baking powder, brown sugar, white sugar and salt in a medium bowl.

In another bowl, whisk the eggs and buttermilk together. Mix the egg mixture into the dry mixture until just combined. Add the melted butter and oil and combine well.

Add in the drained corn and fold it in gently.

Pour the batter into the into the cake pan and cook for about 45 minutes. Let cool slightly before serving.

Notes: you can add jalapenos into this recipe for a spicy corn bread or even cheese if you like a cheesy corn bread!
