Fresh Fig, Orange and Almond Cake

Ingredients:

  • 1/2 cup of unsalted butter; at room temperature

  • 1 cup of sugar

  • 3 large eggs

  • 1 1/2 tsp of almond extract

  • 2 tbsp of orange zest

  • 1/2 cup of sour cream

  • 1 cup of AP flour

  • 1/2 cup of almond flour

  • 1 tsp baking powder

  • 1/2 tsp kosher salt

  • 12 ripe figs; cut into quarters

  • 2 tbsp of brown sugar

Preheat your oven to 350F and set up a baking loaf with parchment paper. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Add in your eggs and mix so the eggs are completely integrated. Add in the almond extract and orange zest and mix again.

Fold in the sour cream and mix well.

Add in the dry ingredients (flour, almond flour, baking powder and salt) and mix it into your batter until smooth.

Fold in all but a few of your fig quarters (saving some for the top).

Add in 1/2 of your batter to the prepared loaf pan. Sprinkle 1 tbsp of brown sugar. Add the second 1/2 of your batter and top with the rest of the fig quarters. Sprinkle the remaining 1/2 tbsp of brown sugar on top of the loaf and figs.

Bake for about 50 minutes to an hour or until the inside if fully cooked.

Serve with tea or coffee!
