Classic Sugar Cookies

Ingredients:

  • 2 3/4 cups of all-purpose flour

  • 1 tsp of baking powder

  • 1/2 tsp of baking soda

  • 1/2 tsp of salt

  • 1 large egg

  • 1 cup of unsalted butter; room temperature

  • 1 cup & 2 tbsp of white sugar

  • 2 tbsp of brown sugar

  • 2 tsp of vanilla extract

  • 1/4 cup of sugar (Optional: wouldn’t recommend this step if you plan on icing the cookies.)

Preheat the oven the 350F and line two baking sheets with parchment paper.

Combine the flour, baking soda, baking powder and salt together in a small bowl. In the bowl of a stand mixer, cream the sugar and butter together. Once you have a fluffy, light mixture, mix in the egg and vanilla extract. Combine the dry ingredients and mix until combined but not over-mixed.

The dough will be thick and sticky. Roll the dough into balls and place on the baking sheets.

Optional step: Role the dough in the extra sugar and then place on the baking sheet. The sugar will create a nice crunch on the cookie.

Bake for about 7-8 minutes until the edges begin to brown.

Royal Icing Ingredients:

  • 3 cups of powdered sugar

  • 2 tbsp of milk

  • 2 tbsp of light corn syrup

  • 1 tsp of vanilla extract

  • Water for thinning

  • Optional: gel food coloring

Add the powdered sugar to a bowl and slowly add the other ingredients, whisking together. Best to use an electric mixer of some sort.

Once the cookies have completely cooled, you can dip the cookies in the royal icing, or pipe it on to create a design. Place the iced cookies on a cooling wrack and let the icing dry.
