Asian Inspired Turkey Lettuce Wraps

Ingredients:

  • 1 tbsp of olive oil

  • 1 lb of ground turkey

  • 1 knob of ginger; minced or grated

  • 2 cloves of garlic; minced or grated

  • 1 yellow onion; finely chopped

  • 1 zucchini; shredded

  • 2 carrots; shredded

  • 1 cup of Napa cabbage; shredded

  • 3 scallions; finely chopped

Sauce ingredients:

  • 4 tbsp of soy sauce

  • 3 tbsp of hoisin sauce

  • 1 tbsp of sweet chili sauce

  • Squeeze of 1/2 a lime

  • 1/4 tsp of black pepper

  • 1 tbsp of sesame seeds

Other ingredients:

  • Butter lettuce

  • Cucumbers; julienned (optional)

  • Rice (optional)

  • Chili oil / chili crisp (optional)

In a large pan, heat up your olive oil over medium heat and add in your group turkey. Cook until it is no longer pink, crumbling it up as it cooked down.

While your meat is cooking, mix all the sauce ingredients together in a bowl and set it aside.

Add in the in the ginger, garlic and onion and let it all sauté together.

Add in the shredded zucchini and carrots. Fold everything in together and cook it down until it wilts down a bit. Add in the cabbage and repeat again. You want everything to sort of breakdown and blend together. The mixture should reduce down to about 1/2 of what it was when everything was originally put in the pan.

Pour your sauce over everything in the pan and mix again so that everything is coated.

Cook for about 15 minutes, stirring often, so that things get nice and caramelized.

Serve in little butter lettuce cups. I like to serve mine with chopped cucumber and chili oil, but do whatever!
