Veggie-packed breakfast egg bites
Ingredients:
6 eggs
1/2 cup of cottage cheese
1/2 tsp of kosher salt
1/2 tsp of black pepper
1/2 tsp of garlic powder
1/2 tsp of paprika
1 bag of spinach (6 oz)
1 small sweet potato (or about 1 1/2 cups); peeled and shredded
1 red bell pepper; finely diced
1/4 cup of shredded cheddar cheese
Preheat your oven to 350F and spray a muffin tin with some avocado oil (or use from muffin tin liners). Set that aside for later.
In a blender or food processor, blitz together the eggs, cottage cheese, salt, pepper and garlic powder until smooth. Then add in your spinach and blend it again. (If you are doing this all by hand, just make sure your spinach is finely chopped and fold it in with the rest of the veggies).
Pour that mixture into a bowl and fold in the shredded sweet potato, and bell pepper. Fold in the cheddar cheese.
Divide the mixture among the muffin tin holes.
Bake for about 25 - 30 minutes, or until nothing is jiggly.
Let cool completely and store in an airtight container in the fridge. Reheat for about 20 - 30 seconds for a warm egg bite in the morning!
