Three Cheese Skillet Gnocchi Bake

Sauce ingredients:

  • 2 tbsp of olive oil

  • 1 lb of ground turkey (you can use any ground meat you like!)

  • 1/2 of a yellow onion; finely minced

  • 3 garlic cloves; sliced

  • Two 15 oz. cans of tomato puree (or sauce)

  • 1/2 cup of water (+ a little more if your sauce is too thick)

  • 1/4 cup of mascarpone cheese

  • 6 - 7 leaves of basil; chiffonade cut

  • Salt & pepper to taste

Other ingredients:

  • 1 package of fresh or frozen gnocchi (I used the frozen Chive Gnocchi from Capone Foods)

  • 2 large handfuls of baby spinach

  • One 8 oz. log of mozzarella cheese; cut into slices (shredded mozzarella also works if that’s what you have)

  • 1/4 cup of grated parmesan cheese

Preheat your oven to 375F.

In a cast iron skillet, heat your olive oil on medium heat. and once hot, add in your ground turkey. Cook until there is barely any pink left and it is starting to brown.

Add in your onions and garlic. Mix everything together and cook until the onions are glossy.

Add in your tomato puree and water, mix it all together and then stir in your mascarpone cheese, making sure there are no clumps of cheese left. Bring to a slight simmer and then bring the heat down to a simmer.

Add in your chiffonade basil and season with salt and pepper.

Add in your gnocchi and stir them into the sauce so they are fully coated.

Add your spinach and fold it into the gnocchi / sauce mixture until just wilted.

Turn off the heat and top the saucey gnocchi with the sliced mozzarella cheese and then top it with the grated parmesan.

Put the entire skillet into the oven for abut 30 - 40 minutes, or until the cheese is melted and crispy.

Serve immediately.
