Super Simple Turkey Bolognese
Ingredients:
1 package (or 16 oz.) of ground turkey
1 link of mild Italian chicken sausage (uncooked)
2 tbsp of olive oil
2 large carrots; finely chopped
1 large white or yellow onion; finely chopped
1 shallot; finely chopped
1 15 oz. can of crushed tomatoes
1 15 oz. can of tomato sauce
1 bay leaf
1 tsp of sugar
2 tbsp of tomato paste
Salt & pepper to taste
In a Dutch oven or a heavy bottomed pot, heat your 2 tbsp of olive oil on medium heat. When the oil is hot, add the chopped carrots, onions and shallots. Season with salt and pepper and cook for about 5 minutes, or until the onions get glossy. (If you like a spicy sauce, add in a few pinches of red pepper flakes here)
Add in your tomato paste and mix well.
To the veggies, add in your ground turkey and break up the meat and cook for a few minutes. Then add in the sausage meat and mix well. Season again with salt and pepper. Allow the meat to cook down so there is no pink left and become crumbly.
When your meat is cooked, add your can of crushed tomatoes and tomato sauce. Clean out the cans with a splash of water and add it to the sauce.
Mix it well, add the sugar and bay leaf, cover and let sit for about 15 minutes on medium heat. When it comes to a boil, turn down the heat and let it simmer.
Honestly, the longer you let it simmer, the better. You could let it sit there all day or just let it sit there for an hour.
When you are ready to serve it, mix it will with a pasta of your choice.
Top with freshly grated parmesan cheese and enjoy!
