Spinach, Feta & Beef Pie

Ingredients:

  • 1 5 oz package of fresh spinach

  • 1 lb of ground beed

  • 1 large onion; finely diced

  • 4 oz. of Greek feta; crumbled and drained

  • 3 cloves of garlic; minced

  • 2 tsp of dried oregano

  • 1 tsp of paprika

  • 1 tsp of ground pepper

  • 1/2 tsp of kosher salt

  • 2 eggs; slightly beaten

  • Salt & pepper

  • 1 package of frozen puff pastry; defrosted

In a large pan, add your spinach and about 1/4 cup of water. Cook the spinach down until just wilted but still bright green. Drain the spinach and squeeze all of the water out that you possibly can. Line a bowl with a paper towel, place the drained and squeezed spinach in the bowl and let come to full room temperature (or put it in the refrigerator until you are ready to use it).

In a large pan on medium heat, cook your onions down until glossy. Then add in your ground beef and once it is starting to brown, add your minced garlic. When the beef is primarily browned, add in your spices (dried oregano, paprika, pepper, and salt).

Cook until the beef is fully browned and the cooking liquid is primarily evaporated. Move the beef mixture to a bowl and set aside to cool completely.

Once your beef mixture is fully cooled and we can make the filling mixture! Take the cooled spinach and cut it up into small pieces, sprinkle it over the beef mixture. Crumble in your drained feta cheese and add in your beaten eggs and mix well.

Preheat your oven to 350F and butter a baking dish or Pyrex pan.

Roll out your pastry dough and cut the pastry dough so you have one piece that can cover the bottom of your baking dish and go up the sides. The other piece should work as the top. Lay the bigger piece down on a buttered baking dish (I used a small casserole dish) and then pour the meat/cheese mixture in patting it down, and making sure it is even. Add the smaller piece of pastry dough on top and pinch the edges together. You should have a fully sealed pastry dough.

Beat one more egg to use as egg wash and using a pastry brush, brush the top of your pie. Using a sharp knife, cut a few slits in the top and sprinkle with sesame seeds if you want.

Bake the pastry for about 50-60 minutes. Your pastry dough should be nice and golden brown on top and around the edges.

Serve warm with a nice side salad!
