Spicy Pork & Cabbage Stir Fry

This recipe was inspired by Aaron Huh’s Jeyuk Bokkeum (spicy stir-fried pork) recipe but this is my spin on it!

Ingredients:

  • 1.5 lbs of thinly sliced pork belly (you kind find this at your local Asian market)

  • 4 scallions; cut in 1 inch pieces

  • 1/2 a yellow onion; cut in slices

  • 2- 3 cups of Napa cabbage; cut in 1 inch pieces

  • 1- 2 tbsp of cooking oil (something neutral like vegetable oil)

  • Sesame seeds for garnish (optional)

Ingredients for the marinade:

  • 2 tbsp of Gochujang (Korean chili paste)

  • 2 tbsp of Gochugaru (Korean chili flakes)

  • 1 tbsp of sugar

  • 1 1/2 tbsp of soy sauce

  • 1 1/2 tbsp of oyster sauce

  • 2 tbsp of mirin

  • 1 clove of garlic; minced

  • 2 tsp of orange juice

  • 1 tbsp of rice syrup (corn syrup also works, or honey/agave)

  • 1 tsp of sesame oil

In a large bowl, mix everything together to create your marinade. Taste and adjust as needed- you may want it more spicy (add more gochugaru) or more sweet (add more sugar or rice syrup). Add in your pork belly, mix well so everything is covered in marinade and refrigerate for at least an hour, or more!

After your pork is properly marinated, heat a pan with about 1-2 tbsp of cooking oil. Add in your onions and cook until glossy. Add in your cabbage and scallions, and stir in for about 2 minutes. Remove the pork from the marinade and put directly in the hot pan. Cook until the pork is fully cooked.

Move to a serving plate and sprinkle with sesame seeds.

Serve over rice and with some lettuce to make wraps!
