Shaved Brussels Sprout Salad

This is one of my favorite heartier salad sides- it is super flavorful, has a great mouth feel and is so easy to make!

Ingredients:

  • 1 lb of full Brussels sprouts; cleaned and any bad leaves picked off

  • 1/2 cup of sliced and toasted almonds (slivered also works)

  • 1/4 cup of shredded parmesan

  • 2 tbsp of olive oil

  • Half of a lemon; juiced

  • Salt & pepper

Using a mandolin or food processor, shred the Brussels sprouts (if you are feeling like you are looking for something super easy, you can buy the shaved Brussels from the grocery store).

Once shredded add the Brussels, almonds and parmesan to a boil. Toss with the lemon juice, olive oil, salt and pepper. Toss well and serve!

This salad stays good for a day or so even after it is dressed.
