Fennel, Avocado & Orange Salad

This salad is a perfect side for any summer meal or BBQ. The acid of the oranges mixed with the creaminess of the avocado and strong anise flavor is the most satisfying combination on a hot day! It is such an easy salad to prepare and will impress all your friends and family!

Ingredients:

  • 2 avocados; sliced

  • 2-3 oranges (or 2 oranges and 1 grapefruit); supreme the fruit

  • 1 bulb of fennel; sliced

  • 3 tbsp freshly squeezed orange juice

  • 2 tbsp olive oil

  • Salt & pepper

In your serving bowl (or platter), layer the slices of fennel and avocado.

Supreme your oranges over the fennel and avocado, letting the juices from the oranges drip. This is the start of building the dressing for this salad.

Right before you are about to serve, drizzle with olive oil and salt and pepper to taste.

Supremes: /su-PREMS/ in the culinary world, citrus segments are called supremes. The process gets rid of the membranes between the citrus wedges and their bitter white pith.
