Refried Black Beans

Ok, I know these may not look like much but they are PACKED with flavor and are so delicious. I could literally eat this for dinner with a spoon.

This recipe is a re-make of the beans that my Guatemalan house cleaner used to make us growing up. I never managed to get her recipe, so I re-created this via taste and did as best as I could.

Ingredients:

  • 4 tbsp of vegetable oil

  • 1/2 a white onion; roughly chopped

  • 1 clove of garlic; smashed or cut in rough slices

  • 2 (15.5 oz) cans of black beans; drained and rinsed

  • 1 tsp of salt

  • 1 1/2 tsp Adobo seasoning

  • 1 tsp of Sazon with Azafran

  • 2 bay leaves

In a pot big enough to hold all of your beans, heat up the oil on a low heat and add your onions. Cook the onions until glossy - you want them to be cooked but not getting golden brown at all. Add in the garlic and let that get aromatic.

Add in your two cans of beans and season with the salt, Adobo and Sazon. Mix everything together and toss in your bay leaves.

Leave this to simmer for about 20 - 30 minutes or until the beans are warm and soft.

Remove the bay leaves and turn off the heat. Using a hand / immersion blender (or transfer to a regular blender), blend everything together until it is thick and creamy.

Taste it and adjust any seasoning as needed. Keep warm on the stove until you are ready to serve.

One fun way to switch this recipe up is to add some cheese into the bean mix for a cheesy bean situation OR move the beans to an oven safe bowl and top with cheese. Put the bowl in the oven on 400F to melt the cheese.

Serve with chips or as a side to a taco night!
