One Pan Chicken + Ptitim

This is my version of @ruhamasfood One Pan Chicken and Ptitim recipe. This has become a go-to on our weekly menu rotation. (Ptitim is pearled couscous).

Ingredients:

  • 1 small yellow onion; cut in slices

  • 2 tbsp + 1 tsp olive oil; separated

  • 1 lb of chicken breast; cubed

  • 5.8 oz of pearled or Israeli couscous (I used a box of pearled couscous and just toss the seasoning packet it comes with)

  • 1 tsp of kosher salt

  • 1 tsp of garlic powder

  • 1 tsp of turmeric

  • 1 tsp of sumac

  • 2 tsp of chicken consommé

  • 2 (heaping) tsp of tomato paste

  • 1 tbsp of date syrup

  • 1 can of chickpeas; drained

  • 1 3/4 cup of boiling water

  • Optional (but encouraged) topping: chopped parsley

Preheat your oven to 420F.

In a small pan, heat up the 1 tsp of olive oil and fry up your sliced onions until glossy and golden brown.

In a medium baking dish (I would use something around 10.5 x 7.5 inches in size) add in all your ingredients in order that they are listed, mixing as you go, including the cooked onions and additional oil.

Crumble and wet some parchment paper and layer that on top of your baking dish. Seal with tin foil.

Bake, covered, for about 45 minutes. Uncover (taking both the parchment paper and tin foil off), mix, and bake for another 5-10 minutes, or until more of the liquid has evaporated.

Top with chopped parsley and serve immediately. Serve with Israeli salad.
