My dad’s cucumber salad

If you have ever been to my parents house for dinner, you have likely had this salad before. It is a super quick side salad to put on the table that is sure to impress.

I have no idea where he came up with or got this recipe but to me it is reminiscent of an Eastern European salad (heavy on the onions) mixed with some Asian flavors, probably influenced by living in the Bay Area.

If you are looking for a way to use up some cucumbers and onions, this is a great recipe.

Also, this is sort of a quick pickle, so it sits nicely in the refrigerator if you don’t finish it all in one go!

Ingredients:

  • 1 small sweet onion; sliced incredibly thin (also use your mandolin for this!)

  • 1/3 cup of seasoned rice vinegar

  • 1/2 tsp of kosher salt

  • 1/2 tsp of white sugar

  • 1/4 tsp of ground pepper (or a few cracks of fresh pepper)

  • A pinch of dashi powder (if you don’t have dashi, do a baby splash of fish sauce)

  • 2 Persian cucumbers; sliced incredibly thin (use a mandolin!)
