Matzah Brei

Ingredients:

  • 4 eggs

  • 2 tbsp of milk (milk of your choice)

  • 1/4 tsp of salt

  • 1/4 tsp of freshly ground pepper

  • 4 sheets of matzah

  • 2 tbsp of butter

Optional (but encouraged) toppings: jam, maple syrup, sour cream, white sugar, fried egg, schug

In a large bowl, whisk together the eggs, milk, salt and pepper.

Run your full matzah sheets under some warm water, wetting both sides. Break the wet matzah into the bowl of whisked eggs in pieces.

Mix everything in the bowl together, making sure the matzah pieces are totally covered.

In a large pan, melt your butter over medium heat. Pour the mixture into the pan and using a spatula, move it around like you are making scrambled eggs. Cook for about 5-6 minutes, until the egg is fully cooked. Similar to scrambled eggs, you can cook this longer or shorter, depending on how you soft you like your eggs.

Serve immediately with the topping(s) of your choice.

I personally like drizzling my matzah brei with maple syrup and eating it with a dollop of jam on the side.
