Chinese Tomato Egg Stir Fry

Note: This recipe is for 1 person, but you could definitely adjust the recipe for how many people you are cooking for.

Ingredients:

  • 2 eggs

  • 1 large tomato; cut in slices

  • 1 scallion; sliced and greens and whites separated

  • 1 clove of garlic; minced

  • 1 tbsp of ketchup

  • 1 tbsp of oyster sauce

  • 2 tsp of sesame oil

  • 1 tsp of sugar

  • Salt & pepper

  • 2 tbsp of vegetable oil, separated

In a small bowl, whisk together the eggs with a pinch of salt and pepper and set aside.

In another small bowl mix together your sauce by mixing together ketchup, oyster sauce, sesame oil and sugar. Adjust as needed to your own taste.

In a frying pan (or wok, if you are feeling fancy), heat 1 tbsp of vegetable oil. When the oil is hot, add in your eggs and scramble them lightly. Pull them off the pan when they are just about done (they will finish cooking later) and set aside.

Add the additional 1 tbsp of vegetable oil to the pan and fry off the white part of the scallions and your garlic until fragrant. Add in your tomato slices and cook until the tomatoes are softened.

Add in your sauce and mix well to coat the tomatoes. Fry for a few minutes and then add in your egg. Mix well.

Serve immediately and over hot rice. Top with the greens of the scallions.
