Garlicky Tortellini with Broccolini

Ingredients:

  • 1 box (or 1 lb) of tortellini (I like fresh, refrigerated tortellini, but you can use dry too)

  • 1 bunch of broccolini; stems cut off and cut into bite sized pieces

  • 1/2 cup of olive oil

  • 2 tbsp of unsalted butter

  • 5 large cloves of garlic, minced

  • 1/2 tsp of dried chili flakes

  • 1/2 tsp of kosher salt

  • Fresh ground pepper to taste

  • Optional topping: freshly grated Parmesan cheese

In a large pot, bring some salted water to a boil. Once you have a rolling boil, add your broccolini and cook for 2 minutes. When your 2 minute timer goes off, add your tortellini and cook for an additional 3 minutes. Strain your tortellini and broccolini, and set aside.

Note: If you are using dry tortellini, cook as instructed on the box, adding your broccolini in for the last five minutes.

In the same pot you used to cook your pasta, heat up your olive oil. Once your olive oil is hot, add your garlic, chili flakes, salt and pepper.

Cook for about 3 minutes or until the garlic just starts to look golden. Turn remove from heat and add your butter. Once your butter is melted, add back in your broccolini and tortellini and toss well.

Portion the pasta into your serving bowls and top with grated Parmesan cheese.
