French Style Lemony - Yogurt Cake

The French Yogurt Cake is a French-household staple, made from ingredients that most people already have on hand. The traditional recipe uses a classic French glass jar yogurt to measure everything and it can all be made in one bowl, making this a great entry into baking. My version pays homage to the classic French yogurt cake with a lemony twist.

Eat it for a snack, breakfast (with coffee or tea), or dessert (with fresh whipped cream and in-season fruit).

Ingredients:

  • 1/2 cup of plain yogurt

  • 1 cup of sugar

  • 3 eggs

  • Lemon zest from 1 lemon

  • 1/2 tsp of vanilla

  • 1/2 cup of vegetable oil

  • 2 tsp of baking powder

  • 1/2 tsp salt

  • 1 1/2 cup of AP flour

Preheat your oven to 375F and prepare an 8 or 9 inch cake round with parchment paper. Set that aside.

In a large bowl, mix together the yogurt, sugar, and eggs with a wooden spoon until smooth. Mix in the lemon zest and vanilla and mix again. Add in the vegetable oil and mix until everything is smooth and not separated.

Add in the baking powder, salt and flour and mix until your batter smooth.

Pour your batter into the cake pan and bake for about 30 - 40 minutes or until the center comes out clean when you stick a toothpick in it.

Let cool completely before serving.
