Cold Sesame Soba Noodles

Cold soba noodles are perfect comfort food for a warm day. They are easy to prepare and store well in the refrigerators for lunches for the week.

Ingredients:

  • 1 package of soba noodles (I used green tea soba)

  • 3- 4 tbsp of soy sauce

  • 2 tbsp of sesame oil

  • 1 tbsp of rice vinegar

  • 1 tsp of sesame seeds

  • 1 Persian cucumber; julienned (sliced in very thin sticks)

  • 3 scallions; just the lower half julienned

Fill a medium size pot with water and bring to a rolling boil. Boil the soba as directed on the package (typically around 6 minutes). Drain the water and rinse with cold water. You want the noodles to be cold and fully drained.

In a bowl, whisk together the soy sauce, sesame oil and vinegar. Add the drained noodles and toss well. Put the seasoned noodles in your serving bowls and top with the sliced cucumber and scallions. Top with sesame seeds.
