Chocolate Zucchini Bread

Ingredients:

  • 1 1/2 cup of shredded raw zucchini (about half of a large zucchini or one small one)

  • 1 cup of AP flour

  • 1/2 cup of cocoa powder

  • 1/2 tsp of kosher salt

  • 1 tsp of baking powder

  • 2 large eggs (room temp)

  • 1/4 cup (1/2 a stick) of unsalted butter; melted and then cooled

  • 1/4 cup of vegetable oil

  • 1 tsp of vanilla extract

  • 3/4 cup of brown sugar

  • 1 cup of chocolate chips

Preheat your oven to 350F and grease a baking loaf.

In a medium bowl, mix together the flour, baking powder, cocoa powder and salt. Set that bowl aside. In a larger bowl, whisk together the eggs, oil, butter, vanilla and brown sugar. mix until it is a thicker paste.

Fold the dry ingredients into the wet ingredients until all the batter looks chocolate-y. With a rubber spatula, fold in the zucchini and most of the chocolate chips (keep a few to sprinkle over the top).

Pour the batter into the loaf pan and sprinkle the remaining chocolate chips over the top.

Bake for about 50 - 60 minutes, or until fully cooked in the middle.
