Caprese Beans with Italian Sausage + Kale

Ingredients:

  • 1 tbsp of olive oil

  • 1 lb of mild pork Italian sausage meat

  • 1 14 oz. can of whole peeled tomatoes

  • 1 14 oz. can of tomato sauce

  • Salt + pepper

  • 2 14 oz. cans of navy or cannellini beans; drained

  • 3 cups of lacinato kale; roughly chopped

  • 2 cups of mozzarella (I prefer to cut up larger mozzarella balls, but you can definitely use shredded mozzarella )

  • 1/2 cup of shredded Parmesan

  • 1/3 cup of panko breadcrumbs

Preheat your oven to 400F

Heat your oil in a cast iron skillet and add in your sausage meat. Using a wooden spoon, break up the meat so you have small crumbles. Cook until the sausage crumbles are full browned.

Add in your whole peeled tomatoes and using the spoon break up the whole tomatoes into smaller chunks. Add in your tomato sauce and season to your taste with salt and pepper.

Stir in your cannellini beans and your kale and mix as much as you can.

Top with your mozzarella, Parmesan cheese and breadcrumbs.

Bake for about 15 minutes or until the cheese on top
