Brownie Cookies (“Brookies”)
Ingredients:
1 cup of (good quality) cocoa powder
2 cups of white sugar
1/2 cup of vegetable oil
4 eggs
2 tsp of vanilla extract
2 tsp of baking powder
2 cups of AP flour
1/2 tsp of kosher salt
1/2 cup of chocolate chips
1/2 cup of powdered sugar
Preheat your oven to 350F.
In a bowl and with an electric mixer, mix together the cocoa powder, white sugar and vegetable oil until you have a thick paste.
Whisk in the eggs and vanilla and mix well.
Add in the baking powder, flour and salt. Mix until everything is well incorporated and then fold in the chocolate chips.
Refrigerate the dough for at least an hour, so the dough comes together and becomes a bit less sticky. The best situation is to keep the dough in the refrigerator for 4- 6 hours or over night.
Once the dough has been refrigerated, roll the dough into about 1 inch balls and then rolling the balls in the powdered sugar. (I put the powdered sugar into a plate for optimal rolling).
Place the powdered sugar- covered dough balls onto the baking sheet (lined with parchment paper) and bake for about 10 - 12 minutes.
Let cool completely and enjoy!
