Beef areyas

Ingredients:

  • 3 full pitas (with good pockets); split in half

  • 1 lb of ground beef

  • 8 oz. fresh spinach; really finely chopped

  • 1 cup of parsley; really finely chopped

  • 4 scallions; chopped

  • 3 garlic cloves; minced

  • 1 tsp of cumin

  • 1 tsp of salt

  • 4 tbsp of vegetable oil

Preheat your oven to 350F and set up a sheet pan with wire rack for later.

In a large bowl, mix together the beef, spinach, parsley, scallions, garlic, cumin and salt to make a chunkier meatball mixture. Set aside.

Take each half a pita and stuff the meat mixture into the pita, make sure none is falling out. Repeat until all 6 half pitas are stuffed.

Heat the oil in a non-stick pan on medium heat, and place 2-3 half pitas in the pan for about 3 minutes on each side. After 3 minutes on each side, the pita should be crispy, move the pita to the wire rack.

Repeat until all the pitas have been crisped and place on a wire rack.

Pop the sheet pan in the oven for about 15 minutes so the beef can fully cook through.

Serve warm with an Israeli salad and a nice garlic and / or tahini dip.
