One-Pan Baked Gnocchi with Sausage and Burrata

Ingredients:

  • 3 tbsp of olive oil

  • 1 package of shelf stable gnocchi of your choice

  • 2 cups of chopped tomatoes (use what you have but would recommend halved cherry tomatoes)

  • 1 tsp of salt

  • 1/2 tsp of pepper

  • 1/2 tsp of red pepper flakes

  • 2 mild (or spicy) Italian Sausages (I used pork but you can use whatever you prefer)

  • 15 oz of jarred or fresh tomato sauce of your choice

  • 3-4 tbsp of shredded parmesan cheese

  • 4 tbsp of shredded mozzarella cheese

  • 1 ball of burrata

Preheat your oven to 400F.

Heat 2 tbsp of oil in your skillet up on the stove over medium heat. Add in your gnocchi and let it cook through and get a little crispy. Remove from the pan and set aside.

Add in another 1 tbsp of oil and then add in your fresh tomatoes. Season the tomatoes with the salt, pepper and red pepper flakes. Cook until just blistering. Remove from the heat (put them in with the gnocchi) and set aside.

Heat another 1 tbsp of oil and break up your Italian sausage and cook until crumbly and crispy. Once cooked, add in your tomato sauce to make a nice "meat sauce”.

Add back in your crispy gnocchi and blistered tomatoes and mix it in with the sauce.

Cut the heat on the stove and sprinkle with your shredded parmesan and mozzarella.

Bake for about 15 minutes or until your cheese is melted and slightly crispy.

Remove from the oven and add the burrata on top right before serving.

Serve directly out of the skillet.
