at-home lobster rolls

Who knew- making my favorite summer food (lobster rolls) at home is super easy, especially with Kildare Seafood’s seafood deliveries. For this recipe, I used two of their premium, frozen whole lobsters to make two lobster rolls.

*I would say you need about 1 lobster per-person, depending on how large your lobster rolls are. This recipe if for 2 lobster rolls, so adjust accordingly.

Ingredients:

  • 2 whole lobsters; cooked and the meat removed / cut into chunks

  • 2 hot dog buns or brioche loaf buns

  • 10 tbsp of unsalted but high quality butter; split into 2 tbsps and 8 tbsps

  • 1/2 tsp of Tony Chachere seasoning (or Old Bay!)

  • 2 tbsp of chives; chopped

In a non-stick pan, heat up your 2 tbsps of butter. Once melted, toast your bones on each side. Remove from the pan once they are golden brown and set them aside.

Wipe out the pan and lower the heat to a simmer. Melt the addition 8 tbsp of butter on low heat (do not brown the butter). Add your chunks of pre-cooked lobster into the melted butter. You are just re-heating the lobster not cooking it so this shouldn’t take super long. Cook until the lobster is nicely warmed and then season it with some Tony’s.

Place the warm, buttery lobster into your buns, spooning a bit of the extra seasoned butter on top of each roll, and top with some chives.
