Chocolate Chip Blondies

Ingredients:

  • 2 cups of AP flour

  • 1 tsp of baking powder

  • 2 cups of light brown sugar

  • 2 eggs

  • 1 1/2 tsp of vanilla extract

  • 1 tsp of lemon zest

  • 1 tsp of kosher salt

  • 1 cup of mini semi-sweet chocolate chips

Preheat your oven to 350F and grease a Pyrex baking sheet.

In a small pot on the stove, melt your butter down. Once the butter is fully melted and starting to foam on the side, transfer it to a heat proof bowl and let it cool down.

In a large bowl- either a stand mixer with a whisk attachment or just using an electric hand mixer- whisk together the melted butter, brown sugar, vanilla, lemon zest and salt. Once you have a thick paste, whisk in the eggs one by one.

Using a rubber spatula, stir in the baking powder and the flour. Your dough should feel like a thick cake batter or a looser brownie batter and have the color of chocolate chip cookie dough.

Fold in your chocolate chips.

Pour your batter into your Pyrex and bake for about 20 minutes.

Note: You can put anything in blondies! Try adding nuts (walnuts, pecans, slivered or flaked almonds), sprinkles, coconut flakes or even crushed up pretzels for the salty sweet taste. If you want a super rich blondie, you can even add a splash of bourbon or almond extract.
